Why preserve food when we can buy it at grocery stores all winter….
Preserving your food is an important step in connecting yourself to what you eat and to your local farms. By being conscious about how we preserve our garden picks, we are keeping our food choices local throughout the winter months. Food Preservation is as old as humans themselves. The harvest comes once (or twice, if you’re really lucky) a year, and for part of the year, there is no growth. Before grocery stores, humans subsisted on what they grew, found, and killed. Preserving when there is bounty is essential to feed the community in hard times.
Nowadays, learning to preserve connects us with that basic human tradition. We learn how much effort it takes to put up food for the winter, and how essential it is to put quality food in our bodies. We connect to our ancestors who relied heavily on preservation to continue on their lives so we are here today. After all, you are what you eat. Or rather, you are what you don’t poop.
